Easy, affordable, effective, and delicious
I love these as a solution to the problem of coffee water. Rather than worry about the ph and mineral balance of your tap, or mess around with expensive spring water to find what you like best, you can just buy dirt cheap distilled water, add a packet, and rest assured that you have a perfect mineral balance for your coffee. The water I make with these results in delicious light roast filter coffee, and I’m looking forward to trying their other roast profiles. They’re also surprisingly inexpensive; 12 gallons of water should last months, and assuming a 12 oz cup of coffee, these only cost about $0.13 per cup, which is a small price to pay for the increase in quality. I have not tried any competing coffee water solutions, of which I know there are a few, but I’m very happy with these.

Not a Be-All-End-All Solution, but Still Good
For what it's worth, I almost rated this much, much lower. My water at home is egregiously hard and makes even my favorite coffees taste like trash water. Brita water fares only slightly better, and spring water is too varied and unreliable for long-term solutions. Coffee Reddit swears by the remineralization of distilled water, and these packets are touted as the simplest method.My first experience with them was not good. While my coffee didn't taste like garbage, it was very dull tasting—like drinking a coffee while suffering from the common cold. Despite being catered towards lighter roast coffees, this product makes water a bit too hard still to properly extract the fruit-like acidity of many light roast coffees—particularly those from East Africa.It took some experimenting, but ultimately I was able to find a way to make Third Wave Water work for my coffee and my taste buds. For more acidic and "wild flavored" coffees, like those from Ethiopia or Kenya, I use about 60% - 70% Third Wave Water and 30% - 40% straight distilled water to lower the overall hardness and accommodate that fruity acidity. For light-medium or medium roast coffees, particularly those from central or south America with more chocolate/caramel/nutty flavors, you can use it at nearly full strength.Like I said, it takes a little bit of trial and error to fit your personal tastes, but I enjoy how simple this makes the water portion of coffee. $18 makes 12 gallons of water which will last an insane amount of time if you, like me, make smaller cups (8oz.) and dilute to fit your taste. Despite my initial impressions, I am actually impressed and will keep using these moving forward.

Be very careful - might not be safe for espresso machines
I really wanted to love this product. But as it stands now, there are way too many issues and unknowns related to product instructions and contents to remain a customer. After a few gallons of use, a lot of *not great* things happened to my machine:1) My water tank didn't feed water into the boilers correctly2) My grouphead started spitting out steam instead of a steady stream of water3) My steam wand lost pressure4) The hot water tap dispensed cloudy water with flecks of "something" inside (looked silverish)I spent over two hours with my retailer to resolve the problem. Here's where I think things went wrong:1) The TWW packet needs time to dissolve (e.g. don't just put the packet into the gallon, swish around, and expect that the minerals are completely dissolved and ready to be put into the water tank)2) The dissolving process needs to be refined (putting a packet of minerals into a full gallon of distilled water does not create a great environment to create a completely mixed, consistent, dissolved solution)3) I spoke to someone from the company who told me that the TDS target was 150mg/L (this isn't on the packaging anywhere) and I still don't know how much Calcium they're adding to my boilers (too much? too little?)It's a great product in concept, but needs a lot of work for the end customer. AND it's pricey. 15 gallons of water for $15 PLUS the cost of distilled water for minerals that you can buy from a natural food store for pennies.
