I don’t believe the authenticity
My mom dehydrated hatch chili and mails it to me. I bought this to save my mom time and this tastes like a mixture of Chile peppers. Possibly jalapeño and bell pepper. It did not have the hatch Chile flavor.

Cook to 165 degrees before consuming.
I’m not sure why you have to hit that temp. I just now found the warning on the bag in small print after eating them for months.These are not Hatch green chilies as we all know and love them. They are MUCH hotter - more like jalapeños.

Not usable as is
Chile is unusable as is, i had to grind it because after hydrating the first two cups for use in green chile with meat(chile con carne) the peels were like pieces of plastic and tge seeds were completely overwhelming, so I decided to make the best of it and grind it into powder.

It's seeds and skin
I expected some actual chili in my chili flakes! I put this in boiling water for a while and strain out the seeds and skin to make a reasonable chili "tea". I will not buy this again. The red chili was fabulous but not this

not as good a fresh green hatch
I add to things I roast it seem to rehydrate well, not as good a fresh green hatch, but living in norcal it helps me get by when making chili verde.

5lb bag of blah
I bought this to flavor homemade beef jerky. As far as I can tell, it doesn't taste like green chiles and has zero flavor (no spice either).
